Wild Honey | German Raw Honey
Our forest honey is in a class of its own. It has a strong flavour and is rich in natural ingredients, characterised by the honeydew of mighty oaks, firs, and spruces from ancient German forests.
With a low water content of under 18%, measured high enzyme activity, free from pesticides, and natural, species-appropriate beekeeping, it is a delight in terms of quality and taste. By avoiding heat, short storage, and strict adherence to avoiding additives, our forest honey achieves an HMF content that is many times below the limits of the German Honey Ordinance. I drizzle our forest honey on my porridge every morning, with tahini on some sourdough bread, or take 1 teaspoon as a dessert.

I believe that if you have been following the philosophy behind my work and my products for some time, you will know the following sentence that I always say:
Plants are only as healthy as the soil they grow in, and animals are only as healthy as they have been allowed to live and eat.
I follow this principle for all products in my shop and therefore also for our 2 honeys in terms of beekeeping.
The well-being of the bees is paramount. The wings of our queen bees are not clipped! This is the reason why there are naturally also bee swarms, because the queen keeps her wings and can therefore fly away. This is more work for the beekeeper, but that's how nature is. Humans should not interfere.
Furthermore, we attach great importance to the bees not just receiving "substitute" food, but their own honey. This is the only sensible thing. Why? Honey is more than just sugar. For humans, but also for bees. Since it is in our own interest to have a strong bee colony after winter, the bees receive their own honey and not just a substitute. Colonies that feed on honey over winter are much healthier and more vital than if they only receive sugar water.
Every German honey must be raw by law! I only used this term to draw attention to the quality of the honey. Unlike in the USA, in Germany, honey may neither be heat-treated nor have components such as pollen removed. Thus, "raw food quality" is a matter of course for honey from Germany.
Tested by "AMP-Lap GmbH" on 24.03.24 for HMF content, diastase activity/invertase activity, water content, as well as conductivity, sensory properties, neonicotinoids, and glucose oxidase activity.
